What are Totchos?

Totchos are essentially nachos that swap out tortilla chips for tater tots. Also known as tater tot nachos, some people prefer them over nachos because the chips don’t get soggy. Another advantage is that totchos are less messy as you can eat them with a fork.

Cooking Tater Tots

Tater tots on a baking sheet. Can also make these in the air fryer.

Tater tots are the foundation of this recipe. Simply follow the cooking directions on a 32 ounce bag of frozen tater tots. For this recipe, I put the tots on a baking sheet and put in the oven for 30 minutes at 425 degrees. You can easily make these in an air fryer, as well. But you may need to do 2-3 different rounds of cooking due to air fryer capacity.

Making Pulled Pork

BBQ pulled pork is worth the time.

Making BBQ pulled pork can be intimidating because it is a big hunk of meat, but it’s one of the easiest things to make. The pork butt (or roast) is very forgiving due it’s fat content and nature of the cut itself. Need a smoked pulled pork recipe? You can find my popular hot n’ fast recipe HERE.

This tater tot nachos recipe is a perfect use of leftover pulled pork. Great think about pulled pork is that it reheats so well and is very versatile in meals such as nachos, taquitos, and sandwiches.

Gettin’ Saucy

Once you have a plate or baking sheet full of tater tots, drizzle a cup of nacho cheese and BBQ sauce on top. You can use a can or jar of premade nacho cheese sauce or make your own.

Choose Your Own Toppings

Next, top your totchos with with toppings such as diced tomatoes, avocados, cilantro, and jalapenos. Feel free to add other toppings you prefer such as onions, beans, and sour cream.
