- Parmesan cheese (freshly grated)

Which Type of Steak to Use for Steak Bites?

My preference for this garlic parm steak bites recipe is a leaner cut of steak, such as a sirloin or strip steak. Especially since we are going to serve this with a cream sauce. Cuts like ribeye are exceptional and can be used in this recipe, too.
How to Cook Garlic Parm Steak Bites

To begin, cut 1.5 pounds of steak into 2 inch cubes. Place in a medium-sized bowl and season with salt and pepper or my Rocky Mtn Beef Rub. Make sure all sides are seasoned. Let rest in the bowl at room temperature for 10 minutes to allow the seasonings to further penetrate the meat.

While the seasoned meat is resting, get a 12″ cast iron skillet heated over a stove or grill to 500 degrees with avocado oil. Once up to temp, sear steak cubes for one to two minutes on opposite sides. Remove steak from heat and reduce temp of skillet to 350 degrees. Make sure to keep the remaining avocado oil and rendered fat in the pan.
Making the Garlic Parmesan Cream Sauce

To make this creamy garlic parmesan sauce for the steak bites, use the remaining avocado oil and rendered fat from the steak. If less than three tablespoons of grease are available, substitute one tablespoon of butter for each tablespoon missing.
Add in four cloves of freshly minced garlic and cook until fragrant. Add one and one-half cups of heavy cream, half teaspoon of pepper, and a half teaspoon of salt. Let simmer for three to five minutes, stirring occasionally. As the cream starts to reduce, add in a 3/4 cup of freshly grated Parmesan cheese. Mix until dissolved and when sauce thickens, remove from heat.
What to Serve Garlic Parmesan Steak Bites With
Garlic Parm steak bites and cream sauce are best served over a bed of mashed potatoes. Serve with a green vegetable on the side, such as asparagus, broccoli, or bacon Brussels sprouts.
The beauty about this meal is that the cream sauce doubles as your gravy. So you have a plate full of steak, potatoes, gravy, and a veggie on the side!

Garlic Parmesan Steak Bites with Cream Sauce
Garlic parmesan steak bites with cream sauce makes a hearty comfort food in winter or any time of year! Make this meal in less 30 minutes!
Ingredients
- 1.5 pounds steak
- 2 Tbsp steak seasoning
- 2 Tbsp avocado oil
- 4 cloves garlic, minced
- 1.5 Cups heavy cream
- 3/4 Cup freshly grated Parmesan cheese
- 1/2 tsp salt
- 1/2 tsp pepper
Instructions
- Preheat 12" cast iron skillet to 500 degrees using avocado oil.
- Cube steak into 2" pieces and season in a medium-sized mixing bowl. Let rest in bowl while skillet come up to temp..
- Sear steak cubes in cast iron skillet for 1 to 2 minutes. Flip over and cook for another 1 to 2 minutes or until desired crust on steak happens. Remove and place in a clean medium-sized bowl. Set aside.
- With remaining fats in skillet (avocado oil and rendered fat from steak), reduce heat to 350 degrees. Once desired temperature is reached, cook minced garlic in skillet until fragrant.
- Pour in heavy cream and add salt and pepper. Simmer for three to five minutes. Add freshly grated Parmesan cheese and stir until dissolved and cream sauce thickens. Remove and let sit for a few minutes to allow sauce to thicken more.
- Place steak bites on a plate and pour cream sauce on top. Best served on a bed of mashed potatoes.
Notes
- Lean cuts (sirloin, strip) or fattier cuts (ribeye) can be used. I prefer leaner steak for this recipe since the cream sauce adds more richness of flavor.

- Substitute butter if avocado oil and rendered fats are low in skillet when making garlic parmesan cream sauce.
