Pulled Pork Twice Baked Potatoes

Twice baked potatoes are the perfect blend of baked potatoes and mashed potatoes. Hollow out the baked potato, take the innards and make mashed potatoes, and fill up the baked potato skins with it.

Put back on the grill, topped with cheese, bacon bits, and pulled pork. Now that I gave you the brief overview, let me show you how to make these stuffed potatoes!

Which Potato is Best For Twice Baked Potatoes?

Russet potatoes are best for baked potatoes

The best potatoes to use for twice baked potatoes are Russets, also know as Idaho potatoes. Russets are best due to high starch content. That makes the inside fluffy for the filling. Their sturdy skins hold up well during the baking process and make great “boats” for scooping and stuffing.

Baked Potatoes on the Grill

Use a digital thermometer to measure temperature of baked potatoes. Temp should be 202 degrees.

To get started with your twice baked potatoes recipe, rinse and scrub clean four Russet potatoes. Make sure to poke with a fork three to four times. Doing this will keep the potato from bursting during the baking process. Brush outsides with a light amount of olive oil and sprinkle kosher salt on the skins.

Wrap the potatoes in foil if you want them to cook faster. Place on a grill at 400 degrees for an hour or until internal temperature of the baked potatoes reaches around 202 degrees. Remove from grill and let the potatoes rest a few minutes before cutting in half to scoop them out.

Are We Making Mashed Potatoes?

Yep. Pretty much. We’re taking the potatoes we scooped out and placed in a medium sized mixing bowl. Next, we will add 1/4 cup of butter, 1/2 cup milk, 1/4 cup sour cream, and two teaspoons of salt. Grab a mixer and mix until the potatoes are smooth enough for mashed potatoes.

Take this mixture and spoon into the potato boats you’ve made. To help these “potato boats” be sturdier and crispier, fry them in cooking oil for a few minutes first and pat dry.

What Toppings To Use For Twice Baked Potatoes?

The classic toppings to use for twice baked potatoes are shredded cheddar cheese, bacon bits, a dallop of sour cream, and chives. I love topping these with pulled pork as well. Add these toppings, minus the chives and sour cream, and place the potatoes back on the grill to cook for 15 to 20 minutes.

Once they are done cooking, the cheese should be nice and melty. Now top with a dallop of sour cream and sprinkle on some chives. I also love to drizzle on some BBQ sauce!

Are You Supposed to Eat the Potato Skin on Twice Baked Potatoes?

Crying the potato skins makes them more study…and more tasty.

Most people do eat the skin on the baked potato, but it is not mandatory. Don’t let anyone tell you what you can and can’t do.

Baked potatoes are good. Twice baked potatoes are better. But pulled pork twice baked potatoes are the best! Whipped potatoes in a potato boat topped with cheese, pulled pork, bacon, and BBQ sauce!

Ingredients

  • 4 baked potatoes
  • 1 lb. pulled pork
  • 1/4 Cup butter (1/2 stick)
  • 3 bacon strips
  • 1/4 Cup sour cream
  • 1/4 Cup milk
  • 1 tsp salt
  • 1 Cup shredded cheese
  • 1/2 Cup BBQ sauce
  • 1 tsp chives

Instructions

  1. Preheat grill or oven to 400 degrees. Scrub Russet potatoes with water and a small scrub brush. Brush with olive oil and sprinkle kosher salt on top. Poke potatoes with a fork three or four times.
  2. Place potatoes on grill (or in oven) for an hour or until internal temperature reaches 202 degrees. Remove, rest for five to ten minutes.
  3. Slice baked potatoes in half and use a spoon to scoop out the middle of each potato half, leaving about 1/4 inch around the edges and bottom.
  4. Placed the scoop out portion of the potatoes in a medium-sized mixing bowl, along with butter, sour cream, milk, and salt. Use a hand mixer and whip it up like mashed potatoes.
  5. Scoop the mashed potatoes into each potato skin. Top with shredded cheese, precooked bacon pieces, and pulled pork. Put back in grill or oven for 10 minutes.
  6. Remove and top with BBQ sauce and chives. Serve.

Notes

  1. This recipe can be baked in either the grill or oven.
  2. For faster cooking, wrap potatoes in aluminum foil.
