What is Crema?

Cilantro lime crema being poured from the blender to the bowl.

The word “crema” in Spanish means “cream” in English. A lot of people compare Mexican crema to American sour cream, but they are different in that sour cream is thicker, more dense, and has a slightly sour taste. Crema is a mix of heavy cream and buttermilk (some substitute lime juice) whereas sour cream is fermented cream with lactic acid bacteria.

In this recipe, we will be making a crema with a cilantro lime flavor using ingredients which are commonly found in your refrigerator and pantry.
