Wanna make this Buffalo dip recipe? Here’s the ingredients you’ll need:

  • Chicken – one of the key ingredients in this recipe. Can use leftover smoked chicken or even a rotisserie chicken from Costco.
  • Buffalo sauce – for that classic Buffalo hot wing flavor; Frank’s RedHot is the perfect hot sauce for this
  • Ranch dressing – ideal dipping sauce for buffalo hot wings, ranch dressing blends in well to this chicken wing dip
  • Cream cheese – Adds the thickness and nice, smooth flavor to this easy Buffalo dip recipe
  • Shredded cheddar cheese – adds more sharp, pungent flavor
  • Rotel – a blend of diced tomatoes and green chiles, sold in a variety of different heat levels
  • Seasoning – mix in your favorite BBQ seasoning to bring out flavors and even add more heat
  • Hot sauce (optional) – add in a hotter sauce to compliment the Buffalo hot sauce and bring more intensity to this dish

Making the Buffalo Chicken Dip Recipe

Making this smoked Buffalo chicken dip recipe is super simple! Start by getting a medium sized mixing bowl and putting in two cups of shredded chicken, BBQ seasoning, half cup of Buffalo hot sauce, and a half cup of ranch dressing. Add in an 8 ounce brick of cream cheese, half cup of shredded cheddar cheese, and can of Rotel. Mix with a large spoon or spatula until the ingredients are well integrated.

Add some more heat to this recipe by putting in a hot sauce with the heat level you desire. I like to use FYR hot sauces for their variety in flavors and heat levels. I advise to go with either GLD or RED. With that said, if there’s a hot sauce you love, then use it!

Cooking the Smoked Buffalo Chicken Dip

Put the mixed ingredients into either an 8×8 pan or a 10″ cast iron skillet and top with more shredded cheddar cheese. Place on the preheated grill at 350 degrees over indirect heat and cook for 20 minutes.

Regarding smoking woods, I prefer to use a hard wood such as hickory or oak. Either of these will impart a stronger smoke flavor than fruit woods and compliments the buffalo dip ingredients quite well.

Remove from the grill and serve immediately! If the spice level isn’t as hot as you wanted, you can always add more hot sauce and stir. If it happens to be too spicy, add more softened cream cheese and stir.

What to Serve with Smoked Buffalo Chicken Dip

This buffalo wing dip goes pair well with tortilla chips, crackers, and naan bread. When it comes to vegetables, carrots and celery are perfect for dipping as these veggies are staples with buffalo hot wings.

How Long is the Buffalo Wing Dip Good For?

If this dip hasn’t been eaten up at your tailgate or party, you can store this Buffalo wing dip in an airtight container and store in the refrigerator for up to four days.

To intensify the smoke flavor in your Buffalo wing dip, use either smoked chicken (either fresh or leftovers from a previous cook) or smoked cream cheese. For the smoked cream cheese, simply follow the smoking instructions in this smoked cream cheese recipe, just don’t add the pepper jelly.

Ingredients

  • 2 Cups shredded chicken
  • 12 oz. cream cheese (1 1/2 bricks)
  • 1/2 Cup Buffalo hot sauce (such as Frank's RedHot)
  • 1/2 Cup ranch dressing
  • 1/2 Cup shredded cheddar cheese, divided
  • 2 Tbsp BBQ seasoning
  • 1-10 oz. can Rotel
  • 2 Tbsp additional hot sauce (optional)

Instructions

  1. Preheat grill to 350 degrees over indirect heat with hickory wood.
  2. In a medium or large mixing bowl, add all ingredients and mix together. Pour into 8x8 pan or 10" cast iron skillet and top with extra shredded cheddar cheese.
  3. Place on grill and cook for 20 minutes. Remove and serve immediately.

Notes

  1. Substitute ranch dressing for blue cheese dressing if you prefer.
  2. For extra smoky flavor, used smoked chicken and/or smoke the cream cheese at 250 degrees for an hour prior.
  3. Add more heat flavor to the dip by adding another hot sauce that is hotter than Buffalo, using spicy seasoning, and using a hotter Rotel.
  4. Dip with tortilla chips, crackers, naan bread, carrots and celery.
