Breakfast burritos are one of my most favorite things to eat on the planet. Turns out they are super simple to make, too. This chorizo breakfast burrito recipe will be one that you will keep coming back to! Let me show you the details.

What You’ll Need

The ingredients needed for the breakfast burritos.

Here are the ingredients you’ll need to make the best chorizo breakfast burritos:

  • Ground chorizo sausage
  • Bacon
  • Potatoes (russet)
  • Eggs
  • Cheddar cheese
  • Oaxaca cheese
  • Tortillas (10″ or bigger)

For the griddle (or skillet if no griddle is available), bring in a high temperature cooking oil such as avocado oil. Using two griddle spatulas is ideal, but you can still get away with one. Also having multiple bowls to place cooked ingredients in while waiting to bring them altogether at the end is helpful.

Prepping the Ingredients for the Chorizo Breakfast Burrito Recipe

Dice one large russet potato (or two smaller potatoes) into 1/2 inch pieces. Next, dice four strips of bacon into 1 inch square pieces. These will shrink as they cook. Regarding the eggs, crack six of them into a bowl and beat them. As far as the cheddar and Oaxaca cheeses are concerned, freshly shredded melts better. This is due to the anti-caking agents put on pre-packaged shredded cheese. Shred two cups of each.

Which Ingredient to Cook First?

The diced potatoes will take the longest to cook, so season those with salt and pepper and place on your griddle with avocado oil at medium heat. As the potatoes are cooking, put your chorizo and diced bacon on the grill separate from each other. Make sure to spread these ingredients in a thin layer on the cooking surface so you get a more even cook.

Eggs will cook quick on a well-heated griddle, so save those for last. It’s best to cook these over medium low heat as to not burn them.

How to Assemble Your Chorizo Breakfast Burrito

Combine the cooked chorizo, bacon, potatoes and eggs altogether on the griddle and mix. Sprinkle the shredded cheddar and Oaxaca cheeses on top. While this is happening, use another portion of your griddle to warm up the tortillas (also over low heat). Warm tortillas fold better and avoid cracking.

To assemble your chorizo breakfast burrito, start by placing your warm tortilla on a cutting board. scoop up the rest of the ingredients and pile on the center of the tortilla. Fold two parallel sides of the tortilla until they fold about two inches over.

Next, tuck the corners of the folded edges in and start rolling one of the unfolded sides completely over the contents in the burrito. Use the edge of the tortilla to tuck in the ingredients and pull back, making a tight wrap. Then roll the tortilla until wrapped. Once again, make sure the corners are tucked in while rolling the burrito to keep the good stuff inside from falling out.

To finish off our breakfast burrito recipe, we are going to put the burrito back on the griddle at medium heat and let cook for about 30 seconds. It is recommended to cook the folded side down first to seal it. Flip over and do the opposite side for another 30 seconds until you get that nice crust.

What Other Toppings Should I Put On?

While these breakfast burritos are already super tasty, you can take them to next level with avocado (or guacamole), salsa, and/or diced onions and peppers.

Can I Cook these in a Skillet?

You can absolutely cook this in a skillet, especially if you don’t have access to a griddle. You may want to use a couple of different skillets to cook the ingredients at the same time.

Chorizo breakfast burritos are a great way to start your morning (or evening)! Simple Ingredients and quick to make.

Ingredients

  • 1 lb. ground chorizo
  • 1 large russet potato, diced
  • 4 strips bacon, diced
  • 6 eggs
  • 2 Cups shredded cheddar cheese
  • 2 Cups shredded Oaxaca cheese
  • 6 large tortillas

Instructions

  1. Preheat griddle to medium heat.
  2. Dice up large russet potato (or two smaller potatoes) into 1/2 inch pieces. Also dice bacon into 1" pieces.
  3. On the griddle, bring diced potatoes and cook first. Then bring on chorizo sausage and diced bacon. Cook ingredients until done. Finish bacon a little before it gets crispy so it doesn't overcook later.
  4. Cook scrambled eggs until done.
  5. Combine chorizo, potatoes, bacon, and eggs altogether on griddle. Sprinkle shredded cheddar and Oaxaca cheeses on top and mix.
  6. Fold cooked ingredients into center of a large flour tortilla and fold into a burrito.
  7. Griddle the burrito on top and bottom for at least 30 seconds or until the desired brown crust is formed. Serve and enjoy!

Notes

  1. This chorizo breakfast burrito recipe can be done in a large skillet instead of on a griddle. Cooking times will vary as you'll need to cook items individually instead of all at once.
  2. Add ingredients such as avocado and salsa into burrito before folding.
  3. Large flour tortillas should be 10-12". You can use smaller tortillas which will make more.
