I’m starting something new in which I provide tips to help educate my fellow meat smokers/BBQ lovers/cooks/chefs/food eaters/humans. Today’s Tuesday Tip (on a Thursday!) is about foil. In my moderate experience, I highly recommend going with the heavy duty foil. It costs a little more, but will hold up much better than regular foil and save you some heartache with the easy tearing regular foil does. I go with the 18 inch wide foil because I can cover more ground with ribs, pork shoulder, tri-tip, etc.

Another key point with foil is to wrap the food with the dull side touching. This is because the dull side doesn’t stick (as much). This will also save you some heartache because more of your rub and/or sauce will stay on the food.
